It should be impossible, but it actually happened. Since it did happen, there has to have some logic behind it. Even if this world lacks logic, our worlds most likely don't. Of course, I'm no expert when it comes to things like this.
And it's probably wiser to not think about it too much when you can't ever really find an answer to any of this. Things happen here that go beyond human reason, but are normal for the natives. Not dying being one of them. I don't think I've seen any graves for humans in this world. Only those for Pokémon.
